Banana Cake

“I would like to share with you one of my favourite recipes. YENN B&B tries to minimise its environmental footprint and to support fair trade. One of the ways we do this is by offering organic produce in our breakfasts and by using organic cleaning products. Added to this is the fact that Leuven is the world capital of bananas...” (Nadine Gregoor)

Ingredients for 4 people

4 ripe or very ripe bananas, peeled and sliced/mashed - 250g self-raising flour - 2 teaspoons baking powder - 100g melted butter - 200g caster sugar - 2 eggs

Method

Mix all the ingredients together in a bowl (or in a food processor) until a smooth mixture is obtained - Butter and flour a cake tin or line it with baking parchment - Pour the cake mixture into the tin and bake in a moderate oven until cooked through - You can either make one large cake or several small cupcakes.

As variations, you can replace the banana with small pieces of seasonal fruit (e.g redcurrants, apples, pears or figs) tossed in a mixture of sugar and ground cinnamon, and you can sprinkle the top of the cake(s) with flaked almonds.
